The Mango Tree at the Elements Mall is a good place to try Thai food in Hong Kong. While I have not yet tasted the offerings at their local branch (Greenbelt, I understand), we were quite happy to meet Suzie and Eddie, our Hong Kong friend, for dinner there.
We had grilled squid and grilled chicken. I thought the squid had a certain spice that was aromatic and made the taste quite flavorful; I just can't identify what it was. The mixed veggies and Pad Thai was a bit ordinary, but both the basil soft shelled crabs and the lamb curry were hits. The crabs came in hot and crunchy, and the lamb curry wasn't too spicy, but had just enough kick to make me break up into a smile.
We finished up with sticky rice and some layered pudding (much like sapin-sapin). Our bill came to HKD 1,200 for 5 persons. The interiors were elegant, and the night view of Hong Kong Island was quite amazing. Lighting, however, was quite dim, and your pupils would have to adjust as you enter and leave the place. Service was fast and accommodating, true Thai hospitality was evident throughout our dinner.
