This trip to Cebu and Iloilo was very hectic, and we had to pick-up the pace in order to visit several project sites. Our first stop was a real estate development site in Mactan, and by lunch time we were taken to Lantaw floating restaurant in Cordova. Yes, a restaurant on stilts, right in the middle of the sea! The sky was overcast, the wind was very cool and by mid-lunch, it was pouring like crazy. It was the perfect place to grab a few beers and chit chat--the view of Cebu island was fading fast as the rain rolled in, and the lazy atmosphere made me feel like dozing off (as if I hadn't slept on that bumpy plane ride from Manila to Mactan).
We enjoyed our lunch--grilled liempo, some fish, scallops and another shellfish, the name of which escapes me now. I just love their scallops and the this specialty shellfish--you take the insides by the outstretched portions, and as you pull the meat out, you can see it twirl right past the conch cavities! Meaty, tasty and sometimes chewy (specially if the grilled edges are a bit singed). I don't know exactly how much we spent, but judging from the menu, I'd say that if you prepare something like P500 per head, you can already have a mini fiesta!
