I have heard about speculoos, which are Christmas cookies in Denmark, France and Belgium, but when Miguel talked about speculoos butter a couple of weeks ago, I was a bit intrigued. Apparently, his girlfriend Marsha made him try some of the stuff and he liked it. By some chance, Vicky was able to find someone selling Trader Joe's cookie butter and Vicky bought a bottle for us to taste (P500 to P550, depending on where you source this). Consistency is just like peanut butter, but it is actually ground speculoos mixed in oil. The resulting paste is spreadable over bread and crackers, and the ground cookie bits are crunchy. This brand, however, is super sweet and the nerve endings at my gums & teeth were complaining at the loudest volume possible. The kids, however, just loved it with plain vanilla ice cream.
