The dimsum cart, once a fixture in most Chinese restaurants and tea houses, is no longer as easy to find these days. Most shops just steam to order, and that's around a 15 minute wait. It's a difficult business proposition--the store must have a sufficient number of regular customers such that the food items don't overcook. No one wants to eat a soggy hakaw in which the wrapping is just about ready to come off. I was lucky to walk by the Chinez restaurant along Valero St. in Salcedo Village just a bit after the rush lunch hour. Finding a few tables already available, I took my late lunch--an order each of hakaw, shark's fin siomai and chicken feet (priced a bit less than P100 each). Tasty, hot and really fast!
