One of the best artisanal beef tapas that I have tasted, Oscar's beef tapa is made in Catanauan, Quezon. Vicky received a pack as a gift and we have been raving about it ever since. It's very tasty, without going overboard on salt or vinegar. This is not the sweet commercial version, so it is right up my alley. I understand they sun-dry the beef, which is taken from free-range cattle, and they season it according to an old heritage recipe, without preservatives. The tag puts their Manila office in the Dian area (telephone numbers 523-5603 and 313-61-55), and I do hope to get some more of this delicious stuff as soon as I can.
